There is a device available that will help with this. 
The device has a small screen that you point the movie
projector into one side and a camcorder into the other
side.  I used one of these to put 8mm film onto video
tape and it worked really well.  It will all fit on a
table to do the job.  You could simply plug the
camcorder into a video in port on your computer to
capture straight to disk.  I am not sure what would
work the best for that.  I have an older ATI
All-In-Wonder card.  Have not used it for video
capture in Linux yet though so do not know how well it
will work.  Works great in Windoze.  I just have not
had time to mess with video capture on Linux yet.  

The device is made by a company called Goldbeam and is
called "The Producer I Film-To Video Transfer Model
GV-10.  It is older and I would assume there are newer
better ones out now.  You could maybe find it at a
photo store.  I also found on the web a device by
Ambico.  It was on the website
www.videodirect.com/accessories/other/vidtrans.html
and looks similar to mine.  I am sure that there are
others out there as well.

There is a software package that is not being
distributed anymore for linux called Broadcast2000 or
something like that.  It is on the Mandrake 8.1
distribution however so you could load it from there.

fairly nice.  In the past I have done my video editing
on Windoze using Video Wave.  I am thinking about
getting a Mac and using the video editor on it though
(imovie I think) because I have heard that it really
kicks butt!!
