It is very easy to do this on a user-by-user basis with procmail. Red Hat (and
related distributions, and probably others) use procmail as part of local 
delivery for e-mail, so it (sendmail) already has procmail configured. There
are examples of Procmail scripts on the man pages for procmail, or in my 
presentation on procmail on the KLUG website "Past Presentations" page. If
you REALLY want, I can be induced into writing a procmail recipe or two for
this purpose, but you'll probably have more fun figuring it out. :)
