Or you could try creating a sym-link from expected location to the real 
locations....  Are you sure the /mnt/source/./RedHat/RPMS isn't the mount point 
on the client (where Linux is bieng installed)?  Because that is what it looks 
like.  Are you sure the NFS mount succeeded after you changed CD's?  What 
does "mount" say if you run it on the client (Ctrl-Alt-F1?)?.
