Use the command `at`.

Ex.
[timg@timg timg]$ at 5:30 today
warning: commands will be executed using (in order) a) $SHELL b) login shell c) /bin/sh
at> vncviewer 
at> [PRESSED CTRL-D] <EOT>
job 1 at 2002-12-13 05:30

Which winds up running the vncviewer at 5:30.  Very nice and easy.

Of course, the man page has much more information.
