Simply set DESKTOP=GNOME in /etc/sysconfig/desktop

This file is read by a script called prefdm that is started by init, 
and it starts the login daemon (kdm, gdm, xdm, etc..) that you want. 
This assumes run level 5 of course, or your not running a GUI login
daemon.

If your in runlevel 3 and using startx see

Although I disagree with his statement: "Desktop environments like Gnome
and KDE are generally slower than lean window managers like Blackbox or
Ice." as a universal truth he pretty much hits the nail on the head.
