POP3 has been superseded by IMAP4.  I'd recommend against the use of POP3.
The de facto IMAP server would be UW-IMAP, available from:

  ftp://ftp.cac.washington.edu/imap

It's very simple to administer.  The other major option is Courier-IMAP,
which is more work to set up, but supports Maildirs natively:

  http://www.inter7.com/courierimap/

Maildirs are a Good Thing, especially if you're running qmail.
