Spamcop is more than an open relay list.  Is it possible that an
authorized user is using your server to send spam?  Or if you use some
kind of password authorization, is it possible a spammer cracked or
guessed a password?

Have your checked your log files, and tried to find a log entry for one
of the spams listed by spamcop?  And then track it back to the spammer,
or find out what account has been cracked.
