I can't say from personal experience, but a friend of mine runs a 
very capable mail server on Linux.  He uses Courier, I believe.  It's 
not a drop-in replacement for Exchange, but you can run LDAP which 
gets you close.  I think HP Openmail is intended as the drop-in 
Exchange replacement.  I'm not sure what it costs (if anything), but 
Outlook talks to it with the Exchange connector, and all features of 
Exchange are there.
