lm_sensors is pretty good.  It's easy to install (if you read the docs) 
and apps like gkrellm have support for it.  Here a screenshot gkrellm on 
my box:

I've skinned it a bit differently, obviously.  There are other progs that 
do the same, but I typically keep gkrellm open anyway (especially since 
gkrellm2 has support for being a daemon) to monitor my boxes.
