Sendmail is an SMTP server, so is it an "actual e-mail server"?  It
depends what you mean.  If you mean sending mail, yea.  If you mean
connecting and reading mail (IMAP or POP) then no, something else does
that part.

The easiest way to tell how it behaves is to send a message to it and
watch /var/log/maillog. It will record what it does with the message.
