Mutt's not a mail server. It's a MUA (http://wiki.mutt.org/index.cgi?MailConcept)

I also use procmail along with spamprobe (a Bayesian filter) and spamcop. Haven't used spamassassin.

I use fetchmail (http://www.catb.org/~esr/fetchmail/) to gather my email from all the various email accounts I have. Then I have a procmail script that sorts things out and puts the email into my mail folders where I read it with mutt.

My best recommendation would be to google for procmail and mutt scripts, find something you like and modify it to meet your needs.
