You can bind a DHCP server to only listen on one interface, that is one option.
 But you're probably bridging the OpenVPN (tap?) interface and the ethernet
interface?

Not quite following the question.  The tap interfaces with OpenVPN are usually
bridged to the ethernet interface,  unless a recent version of OpenVPN added
proxy-arp support.
