When I looked there was not a CUPS daemon listening, which seemed very
odd - what else uses *:631?

If I check my laptop I see -
{root} # netstat -lpn | grep 631
tcp 0 0 0.0.0.0:631 0.0.0.0:*
LISTEN 7287/cupsd
udp 0 0 0.0.0.0:631 0.0.0.0:* 7287/cupsd

Brock, can you do an "netstat -lpn | grep 631" and cut-n-paste the
output to a message?

I assume that would be a shell command, yes?? But how do you get that verticle bar between "lpn" and "grep"?
 Brock
