Your assuming that I'm making these CDs/DVDs locally, but I'm not.  So
command line is the only way.  What would be nice is a Linux powered
appliance with just a DVD reader and DVD burner where I could go to a
website and click "Burn!".  I might even be tempted to code that.

Right,  you are probably missing some hidden files.  That is why dd or
readcd is nice,  it makes an image that is bit-for-bit the same as the
original (and also demonstrates how catastrophically STUPID the DVD
encryption is in the first place - I can copy encrypted digital media
just as easily as I can copy in-the-clear digital media).
