UML (universal modeling language) is a very early XML standard, one
of the first to sport the all-important DTD (document template
definition).  UML is an excellent language to learn if you want to
see XML "in 'real-world' action."  XML itself is just a template for
extensive language designs, like UML.

And as an application, Dia rocks.  EPS, SVG and other support. 
Combined with LyX, I create all my publications -- articles,
documents, books and even presentations -- in PDF format with all
the goodies (with 0 extra effort).
