I believe you can use a non-encrypted password client against a server
running encrypted passwords.  But the server either does encrypted
passwords or not.  In my opinion it is just easier to do it one way from
the beginning.

You can always use the "update encrypted = yes" and "encrypt passwords =
no" directives to construct your SAM.  I don't know if this works with
SAMs other than flat smbpasswd, i.e. it may not work if your using TDB
or LDAP.
