I'd recommend putting up a nice RH7.3 box, enabling the XVNC service,
and installing Ximian GNOME.

Each student can VNC to the box and you will have to do 0 on the clients
(other than provide vncviewer.exe).  A nice easy way to get started on
Linux prior to any organizational commitment.
