Can you switch VCs after RH "pukes", and see any informative messages.  
Try doing a "text" install of RH to make sure it ain't some video adapter 
problem.

Try running memtest86 on the box for awhile and see if that pukes.

I've used similair hardware to this (includeing the AIC7xxx) without 
incident.
