In V2 it was CTRL-ALT-ESC to release the mouse. Now it's just CTRL-ALT.
The VMware-tools seem to work better in V3 too, releasing the mouse.

In V3 it's also just CTRL-ALT to switch out of full screen. I don't know
if there is a way to change those keystrokes, but that's the default.
