Windows NT4(Workstation) and 2000 Prof will not wipe out grub MBR's. After the first "wave" of installation and the re-boot, u will get an error saying something like
grub load error. I haven't tried XP though.
Grub is pretty resilient that way- it fights MS to the last!!;). I had to use PM 7.0 to replace the MBR- though the fdisk from DOS should probably work too.
