You can RightClink->"Put into run dialog" to see what executable the
entry references.

I think you need to have the installation media mounted.

Right, they are system-wide menus and cannot be edited.  Can you edit
them as root?  Proper GNOME menu editing isn't implemented in the GNOME
version RedHat supplied,  hopefully they will have an update.

You can edit the menus.  Go to nautilus and type "start-here", then
double click on Applications.  A proper menu editor is available in
later GNOMEs.
