I've done this; and old HP Vectra machine with a PCI/PCMCIA bridge card
with a Orinoco silver plugged into it. But this was to connect a
'remote' network to a central network with an access point.
Theoretically you can make an ad-hoc network where you don't need a
traditional access point - but I never got that to work, once the cards
were switched out of managed-mode (use-AP mode) I never got them to find
each other or anything else.

If it supports the hardware required I don't see why not; but as an
aside I think ipcop is a bad firewall solution as it depends on a
breachable high-failure-point hard drive.
