Download the image, go to the web config screen and tell it to upload
the new flash file, wait until it's done flashing.

Yes.

Recently I haven't been flashing them to Linux.  They do everything I
need "out of the box".

I double checked, and it has a "Advanced routing screen" where you can
setup static routes (without even flashing it to Linux).  You can select
if the default route goes though the "WAN" or the "LAN & Wireless".

You can also select "Gateway" mode or "Router" mode.

Sounds like that would do the job for you.
