IMO if you are going for offsite access I would go with a linux based
server, as far as directory administration you could use a software package
such as webmin even if your looking for ease of use. And plus there is much
better multi platform compatibility with the linux server, using samba for
it to be a PDC, etc. Granted some of these services will run on OSX, they do
not run as smoothly as they do on linux.

I mean in most situations wouldn't it be nice to have the users home
directory on windows, be the same as their FTP jail? And with it not taking
much effort?

That's actually more what I was thinking, except their directory looks like
it might meet our needs here too. In addition to staff, I (potentially) have
an army of people that may benefit from access to network resources (>200).
For example, giving an email account and access to a private website for all
the volunteers in the childcare areas. They won't be logging in everyday
onsite, but rather more web based from the outside. The directory
administration on this looks pretty straightforward, which is appealing.

I definitely want to put squid and other services like it on a separate
server.

We currently have a W2K server that I am not convinced is setup optimally.
It's old and will be transitioned out by fall (hopefully sooner). I was
leaning towards doing this with SuSE, but the Apple offering looked pretty
good.
