I know that the iPod works under Linux when formatted as FAT32, and
iTunes now runs under CrossOver Office.
Or, there are tons of Linux tools for manipulating an iPod. I've never
used them, cuz I've got a Mac, but my brother has used his iPod under
Linux (he even used it with the hard drive formatted in HFS+). You can
